We love pancakes and waffles in our house, they are definitely one of my kiddo's staple foods. My sourdough starter is probably close to two-years-old now, and I am so grateful this living culture is part of our household. Ingredients
1/4 cup sourdough starter
1 large egg
2 Tbl butter
2 Tbl maple syrup or sweetener of choice
Pinch of salt
2 cups flour of choice
1/2 cup milk of choice
Water for desired consistency
Directions
Melt butter if it's not at room temp already, and preheat griddle or iron
Mix sourdough starter, egg, butter, sweetener and salt until well combined
Add flour and milk, then mix again just a few times to see how much water to add
Add water to desired consistency (thicker for waffles, thinner for pancakes, thinnest for crepés)
Laddle batter onto griddle or iron. If making pancakes, look for bubbles popping on the top side. For waffles, just watch the light and if it's not dark enough flip it over again for another 30 seconds to a minute or so.
Plate and add toppings of your choice. I love fresh berries, yogurt and maple syrup. You could add flax, presoaked nuts or dried fruit, get creative and let me know what you think!

Notes
This is simple recipe is great for all ages, and can easily be modified to suit your needs and goals! Add quick oats or protein powder as part of your flour for more protein, add cocoa powder or berries right to the batter for an antioxidant boost, flax for omegas, the skies the limit!
